Edit- I seen the mac thing. lol. The newest for mac is 2.2.5 and it should do the trick for you if it is a 1st gen touch. You can google Dev Team Blog and go get redsn0w for 2nd gen. I used Quickpwn on a co-workers touch and it worked just fine.

But for your issue, here is what you can do:
Why don't you install a Windows XP Virtual Machine?
The VM software I use is called VMware Fusion. Its a program that sorta like, emulates a machine on your machine. So you can run both Windows and Mac at the same time.
Thats what I do! xD!

well bro the laptop i currently have is the macbook air its small so is the hard drive... as for the VM im waiting to get well so i can go pick it from a friend he's downloaded it already... hehe.. thanx brah...

actually currently im running boot camp that allowed me to run xp on a partition.. but my .net frameworks is old so cant install quickpwn..

i'll lust still my cousins laptop for a few min...

Yea. And you don't even have to reboot. They'll be both working right to each other.
But keep in mind that I upgraded my RAM from 2GB to 4GB. This way each system has about 2 Gigs to run on. 2GB is just a no go.

My system was operating on a 2GB RAM and then I bought a 4GB RAM.. WRONG!
Shoulda bought a 2GB RAM and add it to my system cuz their are two slots. x.x;
