Most third party apps are downloaded directly to the iPhone via Installer.app or Cydia. When you jailbreak the phone the tool you use will most likely also install these applications for you.

There isn't much of anything there atm. You have to give the devs enough time to port their code over to the new 2.0. It's not going to be some add a line here and there trick, they have to really do some recoding to make it work on 2.0. As for finding the cracked games like Monkeyball... well you will just have to wait since it's not happening very quickly atm.... that or just pay for the game in iTunes and support the devs who created it.
