I typically rely on cydia to install anything, and I have the experience with SSH (chmod and installing ROMs). The theme for my g/f's iPhone is a bunch of PNG files in a folder. Not sure where to put them and how to apply them.
Do I need some sort of Theme Control panel app?
Edit: Please let it be known i have Winterboard already installed on my iPhone 3G (if that helps).

Where they go depends on how you plan to install them. I would set up the PNG's to work with either Winterboard or Customize. Just SSH into the phone, find where the existing WB/CST themes are stored at, and upload the PNG files appropriately. As to where they go, and what subfolders etc, it all depends on what files you have. If you just have icons, wallpaper and dock you should be able to figure it out fairly quickly.

this is tricky the make sure the png images are in layer format... if they're not than i don't think they would work...
